Let It Be Cookies
Sometimes you just need a bicky to go with your cup of tea. These cookies are the perfect choice - they are delicious and super easy to make!
Makes 10 - 16 cookies Prep time: 10 minutes Cooking time: 15 - 20 minutes
Ingredients
2 cups of ground almonds
1 cup of shredded coconut
1 tsp baking powder
2 eggs
1/3 to 1/4 cup maple syrup (Add more ore less depending on how sweet you would like them to be.)
Method
Heat oven to 170 degrees.
Line baking tray with baking paper.
Add all dry ingredients to a bowl, then mix.
Lightly beat two eggs (I usually crack them into a mug and use a fork.)
Add eggs and maple syrup to dry ingredients, mix well.
Spoon on to a tray and cook for 15-20 minutes or until golden.
Variations
You can use alternative sweeteners such as rice malt syrup or honey. If using honey, the cookies will brown faster, so keep an eye on them.
You can add dried fruit and or chocolate chips- be creative!
For extra sweetness, add 1 tsp vanilla essence.
